Few destinations compare to The Hamptons when it comes to culture, class and long stretches of wild beaches. However, when the winter months set in, many of New York’s most influential figures (and many from the nation’s capital as well) flock to Palm Beach for its year-round balmy temperatures, thriving cultural scene and world-class shopping and dining.

Symon draws on the flavors of traditional recipes to create sophisticated dishes. His most prized plates are made based on the recipes passed down from his Greek, Italian, Eastern European and American family. Cooking what he calls “heritage” food, Symon lives by the idea that if a dish takes more than two pans to finish, he won’t make it. In his cookbooks, Symon fuses the influences of the diverse working-class neighborhood in which he grew up with Mediterranean ingredients.

If you are looking for similar mouth-watering flavors, Palm Beach restaurant Costa PB offers a Mediterranean-inspired menu focused on classic, comfortable concepts and flavors. Executive Chef David Valencia comes from the Michelin-rated, James Beard Award-winning The Modern in New York. With over 10 years of culinary experience, Valencia’s cuisine draws inspiration from fresh ingredients and vibrant spices. The elegant, but modern aesthetic of Costa PB is combined with Valencia’s passion for bringing guests century-old traditions and tastes.

Costa PB’s menu offers such entrées as Salt Baked Branzino (with arugula emulsion, grilled lemon and an olive caper tomato relish), and housemade cavatelli, with ricotta, truffle cream, wild roasted mushrooms, grape tomatoes, and herbs. Which led us to the question: does Palm Beach County have any unusual or daring regional cuisine? We didn’t find many local restaurants that ventured too far off the beaten culinary path – Palm Beach diners appreciate haute cuisine and seafood more than anything else – but we did uncover a few unusual dishes at some of the area’s top-ranked restaurants.

Chef Aaron Black of PB Catch, for example, offers salmon pastrami and octopus torchon. At Coolinary Café, Chef Tim Lipman serves some of the county’s most interesting and delectable dishes, such as rabbit tacos, and an innovative take on chicken and waffles: jalapeño-cheddar waffles served alongside preserved lemon and stellar Southern-style chicken. At Buccan, another local favorite, Chef Clay Conley serves innovative small dishes including hand-made squid ink orecchiete and stuffed quail with sweet potato, foie gras and cherries.

This year’s series at Guild Hall kicks off with a conversation with iconic French chef Jacques Pépin (Sunday, August 6, 2017 at 11 a.m. tickets here), which is why we decided to start our Palm Beach dining series with a focus on a French favorite:

Café Boulud
Café Boulud Palm Beach, Chef Daniel Boulud’s award-winning restaurant, is located at the historic Brazilian Court Hotel and serves breakfast, lunch, dinner and room service. The popular dining destination, which debuted in 2003, revealed new renovations in fall of 2016, featuring an expanded and relocated bar, sleek contemporary design and an exciting new menu of incredible modern French cuisine.

What makes this restaurant stand out?

2. What caused the buyer to buy a penthouse at this stage of construction?
The buyer is actually a long-time resident of Singer Island, and they came to us looking for the “crown jewel of Singer Island” – and that’s what they got. When they met our team and saw their dedication, the buyers knew that no other property on Singer Island would be made with the same attention to detail. Our team understands that this is the first luxury condominium project on Singer Island in the last ten years, and they are committed to raising the bar on what that means in all aspects of development.

3. What are some of the distinguishing features of the penthouses and the property overall?
All of the luxuriously designed interiors have open modern floor plans, designer kitchens with Poggenpohl custom kitchen cabinetry and Miele appliances, imported porcelain tile floors indoors and out, wraparound terraces and floor-to-ceiling glass create an effortless flow between indoor and outdoor living spaces. 2. What materials did you use for the public spaces, and what influenced that choice?
We thought about one thing and one thing only – luxury for the buyer. We have completely designed the public spaces with the finest materials – nothing mass-produced. For example, in the lobby we have a back-lit, floor-to ceiling wall of onyx, custom lighting from Italy, custom state-of-the-art millwork installed piece by piece, and silk fabrics from Italy. We’ve taken it to a level of true five-star elegance.

The social lounge is equally sophisticated, and includes custom carpets designed by Stark Carpet to emulate the movement of seawater, as well as starburst wood veneer and stardust glitter vinyl wallcovering, which was inspired by the island’s big night sky. From room to room, we strived to build an ambiance and a feeling that expertly complements the luxurious lifestyle available to residents at VistaBlue Singer Island.

3. Describe how you approached designing the residences themselves.
These are also very luxurious, but we developed a few different schemes to suit different buyer tastes. All of the residences, though, have Carrara Italian porcelain flooring, stunning kitchens with Miele appliances, and the patios feature DEDON outdoor furniture, which is like the Rolls-Royce of patio furniture.

The room that stands out to me the most is undoubtedly the kitchen. We were able to work with a clean palate in this room that allowed us to create a transitional interior into the rest of the residence. There are bronze and cream tones throughout, with cream quartz countertops, walnut-base cabinets, and a satin brass chandelier, among other notable pieces. The kitchen also features a white multi-tiered ceiling that really completes the ambiance in the room and provides a warm hue of neutral color.
